Table for Two

I need some advice. I find it really hard to cook and grocery shop for just two people. Does anyone else have this problem? I do like to cook and I would much rather make a good meal then have a sandwich. I don't mind cooking (most nights.) Some days after a long day at work I am just not in the mood to cook. But I find myself wasting ALOT of food! Most recipes are made for 4 servings so I always have leftovers. Most of the time I can put the leftovers in Brandons lunch or in my lunch but I also end up throwing alot of food away. I mean sometimes we are just not in the mood to have leftovers.
Does anyone have any suggestions?
Also I have the same problem grocery shoppig sometimes. For example, I like lettuce and tomatoe on my sandwiches. But I don't eat sandwichs everyday so I only use the head of lettuce a couple of times before it goes bad and has to be thrown out. Now I know what you are thinking, "make salad." Well Brandon doesn't like lettuce so I am basically buying a whole head of lettuce just for myself but it is such a waste.
The bottom line is I am tired of throwing away food and being so wasteful!
What a dilemma!

I think ultimately drea it comes done to making a list. Time. Just write down what you plan on having for dinner, just dinner for the week. And shop for that week. It really does work. What I do, and i know you mentioned it, is take left overs for lunch, or i "diguise" the food differnt the next day. I'll make a chicken today, and tomorrow we haeve chicken enchiladas, and 2 days form now sopes. Or if me make carne asada, the next day i will make tacos de asada. just chop it up and put it in a skillet, or make carmes con chile. Now as far as the lettuce, have you tried by a bag of lettuce it has less tha a regular head of lettuce. I am in a different situation than you because there are more of us and we don't always have leftovers. But try to be creative with your leftovers so you don't feel like your eating the same thing everyday.
